Chocolate Chip Loaf Cake, Delicious and Easy to Make

I love chocolate chip loaf cake! Can I shout it from the rooftop please? lol

My family absolutely loves this easy chocolate chip cake! We sometimes indulge on early Saturday mornings with a slice of cake paired with a cup of tea/coffee and warm milk for the kids… my preference is always coffee – dark roast. Just imagine, a light, fluffy chocolately slice of cake with a cup of hot coffee… double cream, double sugar…. hmmm yum!!! The perfect breakfast!

When made right, this chocolate chip cake is delicious and impossible to resist!

The great thing about this recipe is that it is really quick and easy to make. I also find that this chocolate chip loaf cake is not overly sweet, and that counts as an added bonus for me. One of the great things about home baking is that you get to determine how sweet you would like your treats to be. You can add more or less sugar depending on your taste.

This is such an easy baking recipe that anyone can make this regardless of how long you’ve been baking. This chocolate chip loaf cake recipe would also make a great project to make with the kids!

So let’s get into it!

The ingredients you will need for this yummy Chocolate Chip Loaf Cake recipe are:

All purpose flour – I typically use unbleached all purpose flour because I prefer the texture of the baked goods made with it, plus it is readily available. Any all-purpose flour will work fine for this recipe

Salt – Enhances the flavor of your baked goods. You could leave the salt out if you use salted butter instead of unsalted butter.

Baking Powder – Acts as a leavening to make the loaf lighter and to help the loaf rise

Pure vanilla extract – I typically make my own vanilla extract by infusing vanilla bean pods in rum for at least 6 months before using it. Vanilla extract enhances the flavor of your loaf. My recommendation is to use pure vanilla extract if possible – the imitation vanilla does not produce a true vanilla flavor

Milk – Milk helps to keep the loaf tender and creates a soft crumb structure. I used whole milk in this recipe, but you could substitute with skim milk or any plant based milk

Eggs – Act as a binder, leavening and helps to add structure to the loaf. It also contributes to the color and flavor of the loaf

Unsalted butter – I used unsalted butter in this recipe so I can control the quantity of salt in the recipe. However, you could use salted butter if that is what is available to you. I would recommend that you skip the salt in the recipe if you will be using salted butter.

Sugar – Besides adding sweetness to baked goods, sugar also keeps baked goods soft and moist. If you absolutely do not want to use refined sugar, you could substitute the sugar out for honey or maple syrup. Check out these tips for using honey as a substitute for sugar.

Chocolate Chips: I used a mix of semi sweet chocolate chips and white chocolate chips for this recipe. You could decide to use a mix of chocolate chips as well, or you can use one type. I used a total of 1.5 cup chocolate chips for this recipe, but you can vary the amount based on your taste

Note: The butter, eggs, and milk need to be at room temperature so that they cream well together. This way the batter gets light and fluffy without breaking. Also, if you store any of your dry ingredients in the freezer, make sure that they are at room temperature before using them. This will keep the batter at a consistent temperature and help it bake evenly in the oven

How to Make Chocolate Chip Loaf Cake


1 Preheat the oven to 350F
2 Prepare a standard loaf pan by lining the pan with parchment paper, and set it aside

1 Mix together the flour, baking powder and salt. Set aside
2 Stir the vanilla extract into the milk. Set aside


3 Add the butter and sugar into a mixing bowl. Then using either a hand mixer or stand mixer, cream the butter and sugar together until light and fluffy. You could also cream the butter and sugar together using a wooden spatula – it would take longer, but it is absolutely doable

4 Once the butter and sugar have been creamed and are light and fluffy, its time to add the eggs. Add the eggs one at a time and mix each egg into the batter thoroughly before adding the next egg.

5 Once all the eggs have been mixed in, it is time to add in the flour and milk alternately.


6 Mix in 1/3 of the flour into the creamed butter/sugar. Do not overmix. Mix until just combined
Next, mix in 1/2 of the milk. Again do not overmix. Mix until just combined
Mix in another 1/3 of the flour
Mix in the last half of the milk
Then mix in the final 1/3 of the flour

7 Next stir the chocolate chips into the cake batter until well distributed in the batter (set aside a few chocolate chips that will be sprinkled on top of the loaf)

1 Pour the chocolate chip loaf cake batter into the prepared loaf pan and then top the batter with the extra chocolate chips that you set aside

2 Place the loaf pan into the preheated oven and bake for 1 hour, or until a toothpick comes out clean from the baked loaf


3 Bring the chocolate chip loaf out of the oven and let it cool in the loaf pan for about 10 minutes. Then remove the chocolate chip loaf cake from the pan and place on a cooling rack until it cools completely

Ingredients

  • 240 g All-purpose flour
  • 2 tsp Baking powder
  • 1/2 tsp Salt
  • 1/2 cup Milk room temp
  • 1 tsp Pure vanilla extract
  • 113 g Unsalted butter room temp
  • 134 g Granulated sugar
  • 3 eggs room temp
  • 171 g semi-sweet chocolate chips
  • 86 g white chocolate chips

Instructions

  • Combine the flour, salt and baking powder in a bowl. Mix through and set aside
  • Add the vanilla extract to the milk. Mix and set aside
  • Add the room temperature butter and sugar to a mixing bowl. Cream until light and fluffy

  • Add the eggs one at a time to the creamed butter. Mix each egg into the batter completely, before adding the next egg. (eggs should be at room temperature)

  • Next add 1/3 of the flour and fold into the batter until just combined

  • Add 1/2 of the milk to the batter and mix until just combined
  • Next, add another 1/3 of the flour, then mix. Add the last 1/2 of the milk then mix. Finally, add the last 1/3 of the flour and mix into the batter. (Ensure that you scrape the bottom and sides of the bowl as you alternate adding the flour and milk in the batter)
  • Fold in the semi-sweet and white chocolate chips into the batter. (Set some aside for topping the cake)

  • Pour the cake batter into the prepared loaf pan

  • Bake in preheated oven @ 350F for 1 hr or until toothpick comes out clean
  • Bring the loaf out of the oven and let it rest in the pan for 10 mins
  • Remove the loaf from the oven and leave it to cool completely on a rack
