Ingredients

  • 1 cup all purpose flour
  • 3/4 cup whole wheat flour
  • 2 tsp baking powder
  • 1 cup granulated sugar
  • 1/8 tsp salt
  • 1/2 tsp cloves
  • 1 cup sour cream
  • 1/4 cup vegetable oil
  • 2 large eggs
  • 1 tsp pure vanilla extract
  • 2 Tbsp orange juice
  • zest of 2 oranges
  • 2 cups blue berries
  • Handful of natural walnuts optional

Instructions

  • Preheat oven to 350F degrees
  • Mix together the whole wheat flour, all purpose flour ,baking powder, salt and cloves
  • In a separate bowl mix together the orange juice, orange zest, eggs, sugar, sour cream and, vegetable oil. Whisk until all the wet ingredients are well incorporated
  • Fold in the dry ingredients into the wet ingredients until just combined. Do not overmix the batter
  • Coat the blueberries with about one tablespoon of flour.
  • Fold the coated blueberries gently into the batter. Do not add the excess flour leftover from coating the blueberries into the batter.
  • Pour the batter into a prepared loaf pan and top with walnut pieces
  • Bake in preheated oven for 1hr 10mins or until a toothpick comes out clean
  • Leave it to cool for a few mins, then Enjoy!

Notes

  • Coating the blueberries with flour will prevent them from sinking in the batter while baking
  • Line your loaf pan with parchment paper, so it is easier to remove from the pan after baking
