Strawberry Romanoff

To make this dessert even more special, you could serve your beautiful Strawberry Romanoff in these gorgeous desserts cups

This recipe is alcohol-free and kid-friendly. However, you could make a grown up version of this by replacing the orange juice and orange zest with an equal amount of Grand Marnier.(or whichever alcohol you prefer)

Also, you could replace the mascarpone cheese with some cream cheese, whipped cream or ice cream. Your dessert, your choice! Feel free to change things up if you want to.

Ingredients

Below are the ingredients you will need for this dessert:

  • Fresh Strawberries – Make sure to select the freshest strawberries possible. Avoid strawberries that are green, brown or already mushy. Instead, you want your strawberries to be bright red with lively green leaves. They should also smell sweet and typically smaller sized strawberries taste better
  • Orange Zest – Wash your oranges thoroughly before zesting
  • Orange Juice – You can use fresh-squeezed orange juice or bottled orange juice for this recipe. The original recipe calls for Grand Marnier which is a blend of fine cognac and bitter orange liqueur, so you can use that instead if you prefer. I will be serving this desserts to kids, so I am skipping the liqueur
  • Granulated Sugar – The sugar will add some sweetness to the dessert
  • Mascarpone Cheese – This is optional. I had some mascarpone cheese in my fridge and wanted a rich decadent layer between the strawberries. You can skip the mascarpone cheese if you choose and use only sour cream. You could skip the mascarpone + sour cream and use ice cream or whipped cream instead
  • Sour Cream – This will add a very slight tart taste to the dessert. It will help to balance out the sweetness and creaminess of the strawberry romanoff dessert,
  • Brown Sugar – The brown sugar will add a deep caramel taste to the dessert while also imparting some sweetness
  • Pure Vanilla Extract – I typically use my homemade vanilla extract. You can use store-bought pure vanilla extract – try to buy the pure vanilla extract and not imitation if possible.

How to Make Strawberry Romanoff

Ok, this dessert has a really elegant name but is really really easy to make.

Step 1: Cut the strawberries into quarters and place into a bowl

Step 3: Cover the bowl with a plastic wrap and chill the strawberries in the fridge to chill for about an hour. Leaving the strawberries in the fridge with the sugar, orange juice and zest will help to add flavor and sweetness to the strawberries. The process of soaking the strawberries in sugar and juice is called maceration.

Step 4: In a separate bowl, mix together the mascarpone cheese, brown sugar and vanilla extract. Stir together until smooth
