This great-tasting, easy Bruschetta recipe is one that comes together in less than an hour. The toppings are so quick and easy to make that you really do not need store-bought bruschetta toppings …. unless you choose to.
I feel like homemade bruschetta beats store-bought bruschetta in so many ways! Especially because you get to decide how much herbs and seasoning you would like in a homemade recipe. Plus this is such an easy bruschetta recipe, there is really no reason why you should not make yours.
In this blog post, I will be sharing 2 bruschetta variations and then a cranberry blueberry appetizer, that is technically not bruschetta.
- The first variation is your typical bruschetta – Toasted baguette slices + bruschetta topping
- The second variation includes brie cheese (because I absolutely love soft cheeses) – Toasted baguette slices + brie cheese + bacon bits + bruschetta topping
- The third (non-bruschetta) appetizer – Toasted baguette slices + brie cheese + cranberry blueberry sauce.
Personally, I love bruschetta with cheese. I think it’s because I have a soft spot for soft cheeses – bocconcini, mozzarella, brie … you name it!! I love it! lol
Oh, and I have to mention that in this recipe I am using dried basil instead of fresh basil. If you have access to fresh basil, you could use it – otherwise dried basil works just fine.

If you are unable to find fresh basil for your bruschetta, dried basil also works well. Alternately, you could substitute basil with oregano or thyme. The flavor profiles of each of the herbs are different from each other, but they would complement the tomatoes and garlic beautifully

What Kind of Cheeses can be Used for Bruschetta?
Several kinds of cheeses can be used for bruschetta. Soft cheeses such as mozzarella or brie can be layered on the slices of bread with tomato/balsamic vinegar topping. Alternately, parmesan cheese or feta cheese can be mixed in with the tomato, balsamic vinegar and basil to be used as the topping.

Easy Bruschetta Recipe
Ingredients
- 1 baguette
- 2-3 Tbsp butter
- 150 g Brie cheese
- 255 g Cherry tomatoes
- 1 clove garlic
- 1 Tbsp balsamic vinegar
- 1 Tbsp olive oil
- 2 tsp dried basil
- Salt to taste
Instructions
- Preheat oven to 350F degrees
- Slice baguette to about 1/2" to 1" thick slices
- Spread one side of the baguette slices with butter (you can also brush lightly with olive oil if prefered). Set aside
- Slice enough brie cheese for each of the baguette slices
- Place each of the baguette slices buttered-side down on a parchment-lined baking sheet
- Bake in oven for 5-8mins until the cheese starts to melt and the bottom of the baguette slices start to brown
- While the baguette slices are in the oven, dice the garlic very finely and place in a bowl
- Cut the cherry tomatoes into quarters and add to the garlic
- Then add the balsamic vinegar, basil, salt and, olive oil. Mix together
- Bring the baguette slices out of the oven once they are slightly browned and the cheese has started to melt
Topping the Baguette slices
- Top with bacon bits, then the cherry tomato bruschetta mix OR
- Top with just the cherry tomato bruschetta mix OR
